Spring & Summer Menu Preview

Spring is coming! My favorite three words spoken during a Chicago winter. Spring means a new season, new flavors, and that sunshine we have all been missing.
Twice a year we change our menu to reflect the seasonal changes around us. For fall and winter, Chef Katie hits on those warming comfort food notes—while during springtime, she likes to highlight the bright colors and flavors the season has to offer.
We are inspired by summers best flavors including – seasonal grilled vegetables (asparagus, summer squashes, corn on the cob, and tricolor greenhouse grown tomatoes) and fresh fruit (berries and melons). Featuring: grilled fare, locally sourced cheese and sausages, with bright herbs and flavors.
Around here, menu development means taste testing, and who is better to judge our new items than the Northern Fork Team? We spend time carefully cultivating fresh flavors to bring to our clients. Once the team feels like we’ve made the best dishes possible we send them to print!
This season we are working on bringing the East Coast to the Midwest with a hearty Shrimp Boil featuring the season’s best offerings: shrimp, corn and Andouille sausage. Let me guess, you can’t wait either. (Baked Bree has a recipe to host your own shrimp boil in the meantime.)
Spring reminds me of brunch and around here we know how to do brunch. A spring quiche, fresh fruit and don’t forget those spring cocktails! Love mimosas? We have three mimosas to step up any brunch – Thyme Lemonade, Pineapple/Strawberry and Citrus Passionfruit. Ask our events team how to get these refreshing Mimosas at your next Party!
The Kentucky Derby is a great food theme for a Springtime party. Start with bourbon chicken skewers, stuffed peppadew peppers and finish with a Mint Julep. Hostess with the Mostess has some great decorating ideas to gather with friends and celebrate the Kentucky Derby.
Summer screams BBQ, so we will bring back some of last year’s favorites such as the Carolina brisket, pulled pork sandwiches and Zesty Tomatillo Chicken with hominy succotash.

Summer days are for hanging poolside with an ice-cold drink in your hand. A couple of our favorites include the Summer Thyme, Hurricane, and a Paloma.
We want to serve our guests what we want to eat. Keeping recipes simple, not complicated, and rotating the menu to keep it fresh and new.
